Cut Tool will do this.  Just drag across, making sure the first mouse click is on an empty space of the viewport and drag over the object.   Use shift key to constrain to an axis.

Hmmm, then I get just another polygon (faces getting cut), but not the object itself, like in the video...

you must start the cut outside of the object first,  this will create a yellow slice line.

Yes, I did so.

Just made a sphere, try the cut tool, but does not work out, like expected...

Ahhh,ok - I used LMB instead of RMB. So now, the cut works like expected - but still dont know, what your´re doing after that to select the upper-area of the sphere (I only manage to select one face and then drag-select the rest). And the bridging I got trouble, also. I can select 1 edge, then another, then bridge just this two. (Only got bridge-tool, when "Edges" in visual tool is selected)

I try to select all open edges, then bridge.... but result is not the same as yours.

I am running with standart config btw.

Could you please explain, how you die the steps after the cut is done?
