When 'Back face In Gray' gets activated, the polygons of an instace, that face away from the camera get shaded in gray, not the backsides of faces. I can select an instance, move the camera and everything is shaded correctly again, but when deselecting the isntance, and looking at the opposite side of the object, the faces that were not visible are now shaded in gray.

By 'Back Face' I mean faces facing away from camera. I am not quite sure what is problem you described. Can you provide a pic.

A short video can say so much more than a thousand pictures. ^^

For me, backfaces would mean the back of a single sided face. The front would be the side where the normal of that face sticks out.

Fixed. It occured if 'View > Object Shading > Show Edge On Unselected Objects' is off.
